Hand-Shredded Chicken with Kimlan Soy Paste

Ingredients

• 2 whole chicken legs
• 10g scallions
• 10g ginger slices
• 1 tsp salt

Dipping Sauce

• 30g Kimlan Soy Paste
• 20g minced garlic
• 20g black vinegar
• ½ tsp sugar
• 8ml heated sesame oil

Cooking Steps

1. Marinate the chicken with salt, cooking rice wine, and ginger for 30 minutes. Add scallions and gently squeeze to release their aroma.
2. Steam the chicken over medium heat for 15–20 minutes until fully cooked. Reserve the natural chicken broth.
3. Mix Kimlan Soy Paste, minced garlic, black vinegar, and sugar. Pour hot sesame oil over the mixture and stir well.
4. Shred the cooked chicken and arrange on a serving plate.
5. Pour the dipping sauce over the chicken or serve it on the side. Add a little reserved chicken broth if desired for extra flavor.
