Handmade Fuzhou Mee Suah is a specialty noodle from the Fuzhou region, deeply rooted in tradition. On the first day of the Lunar New Year, it is customary to enjoy a bowl of mee suah as a symbol of health, longevity, and blessings for the family.
Crafted through a meticulous process that takes up to 9 hours—including kneading, pounding, fermenting, dividing, rolling, threading, sun-drying, and stretching—the noodles develop a thicker, more elastic texture that sets them apart.
When cooked, the noodles are smooth, easy to digest, and highly absorbent, allowing them to pair beautifully with a variety of broths.
